To achieve steaks with a browned exterior and rare center, opt for tuna steaks that are at least 1 inch thick. Prepare the steaks by sprinkling them with a combination of salt, pepper, and sugar. Place steaks sugar side down in a skillet, flipping steaks every 1-2 minutes until centers are translucent red. For a simple variation, skip the sugar and coat the steaks in vegetable oil. Season with salt and pepper and top with sesame seeds before serving. Keep fillets from falling apart by using a fish spatula. Unlike regular spatulas, these have longer and roomier heads, so youâll have greater control as you reposition or flip fillets.

Grilled Fish Tacos

Fish tacos are colorful, fresh, and immensely satisfying. Traditional recipes call for the fish to be coated in a chile-citrus mixture and then grilled in banana leaves. To prepare the chile mixture, we started out by blooming the spices. We put our own spin on it by adding in tomato paste to impart a savory-sweet flavor and citrus juices (orange and lime) to mimic the flavor of Mexican sour oranges. We then transferred the chile mixture to a bowl and coated the swordfish pieces in it. (We nixed wrapping the coated fillets in banana leaves to simplify the recipe.) more Tasty Tacos
