Our early attempts at slow-cooker lasagna yielded gummy noodles and washed-out flavors. A few tricks, including banishing no-boil noodles, using store-bought alfredo sauce flavor-boosted with sautéed mushrooms and garlic, and lining the slow cooker with foil made all the difference, kept prep easy, and kept our lasagna intact.

Slow cooking is a friend or enemy of meat and spices, melding them into something sublime or sapping moisture and flavor. To infuse sweet and smoky flavors into shredded pork filling for our tostadas, we built a sauce using ancho and chipotle peppers (toasted and rehydrated to deepen their flavor) pureed with pineapple juice.

For fall-off-the-bone ribs that never touch a grill, we tossed baby back ribs with a simple spice mix and barbecue sauce and heated them curved around the perimeter of the slow cooker for 6 to 8 hours. A quick run under the broiler just before serving gave them a caramelized and sticky exterior.

For an easy and elegant dessert, we poach pears in a sauce of dry white wine, fresh herbs, lemon zest, vanilla, and cinnamon. After cooking, we reduce the sauce further on the stove to thicken it, coat the pears with the sauce, and chill the dish completely. The fruit absorbs even more flavor and takes on a lovely translucent appearance.

We tested seven slow-cooker models to see if we could save money without sacrificing performance or if we really had to shell out as much as $200 for consistent results. We like slow cookers with programmable timers, warming modes, and clear glass lids, which allow us to assess the food as it cooks. We simmered pot roasts on low; we prepared meat sauces full of tomatoes, sausage, flank steak, and pork ribs on high; and we simmered our French Onion Soup for 10 hours.
