We begin all recipe development by researching and then cooking representative recipes for a dish. In this case, we made cinnamon swirl breads that called for a variety of techniques and mixtures of core ingredients. We uncovered common problems, including faint cinnamon flavor and marked separation of dough and filling. We tackled the problems one by one, starting with inspiration from an airy, cottony Japanese white bread called shokupan and creating a filling that exudes cinnamony flavor while staying put in each slice.
