Poulet au Vinaigre (Chicken with Vinegar)
This classic French country dish features tender, juicy chicken served with a light, savory sauce. Traditional versions call for both light and dark meat, but we opted for chicken thighs to streamline the cooking time. We prepared our sauce with red wine vinegar, white wine, chicken broth, tomato paste, tarragon, and butter. We browned the chicken before braising it in our sauce to intensify the flavor. Lahmajun
Some consider this Armenian crispy flatbread topped with ground lamb and vegetables to be the original thin-crust pizza. To ensure a crispy crust, we set our baking stone on the upper-middle rack of our oven and heated it to 500 degrees for about an hour. This allowed the hot air to circulate, creating the ideal atmosphere for our flatbread to quickly brown.

Angel Hair Pasta with Basil, Caper, and Lemon Sauce
This quick-cooking dish makes for a satisfying weeknight meal. We cracked the code for cooking angel hair pasta by investigating the best cooking time for three top-selling brands. (Spoiler alert: Package directions arenât always correct.) Because angel hair has a tendency to get weighed down by heavy sauces, we created a light pesto sauce made with basil, parsley, capers, anchovies, and other ingredients.

Florentine Lace Cookies
For a fuss-free version of these wafer-thin almond cookies, we nixed temping the hot sugar mixture in favor of removing it from the heat once it began to brown. We used orange marmalade instead of candied orange peel and corn syrup for an easier (and economical) path to bright, citrusy flavor.
Tasting Toasted Sesame Oils
Our tasters were surprised at the range of flavors in the oils we tasted. By doing a little bit of digging, we learned that the flavor of toasted sesame seed oils depends on the roasting time and temperature of the seeds.
