This week is a good time to cozy up to the stove, put on some good music, and cook in your slippers. At my house, everyone is off their normal schedule this week, so I prefer to cook big brunches rather than separate breakfast and lunch mealsâthe kind where anything goes, from [fried eggs]( to [Chili Con Carne]( . . . or both for that matter. For our big, celebratory meals on Christmas and New Yearâs Eve, I usually pull out the beef; a German recipe for braised beef called [rouladen]( on Christmas and a [roasted beef tenderloin]( on New Yearâs. Given that these two meals are on the heavy side, I try to pack the refrigerator with a variety of healthy salads and prepped vegetable sticks for quick dinners and snacking.

Eggs with Sweet Potato and Swiss Chard Hash
I make breakfast hash a lot (using the leftover vegetables from our previous nightâs dinner) but this flavor combination of sweet potatoes and Swiss chard is my all-time favorite. I donât have a microwave, so instead I just add the ingredients to the skillet with some water and cook them until tender before adding the chard.
