Holiday Morning Breakfast

Yes, I’m a cook, but on holiday mornings I want to spend time in cozy pajamas, curled up on the couch sipping coffeeânot hard at work in the kitchen. I like to plan ahead and do my cooking the day before. Stratas and egg casseroles make that easy. I’m a fan of a savory breakfast, so I’m making [Pimento-Cheese Featherbed Eggs]( breakfast casserole made with freshly baked cornbread, pimentos, and extra-sharp cheddarâthis year. After pouring my morning coffee, I’ll heat the oven, pop in the casserole, and lay [strips of bacon]( on a [rimmed baking sheet](. That’s the extent of the work. When the casserole comes out of the oven, the bacon goes in. By the time the bacon is perfectly crispy, the eggs have cooled to âjust right,â and the hot sauce is waiting on the table. So easy!

Pimento-Cheese Featherbed Eggs
To speed up the preparation for this strata, we bake our cornbread on a rimmed baking sheet, creating a thin, quick-cooking layer of cornbread. To prevent the spices from clumping in the custard, we add them to the cornbread batter instead. Oven-Cooked Bacon
To easily cook a whole pound of bacon at once (and free up our stovetop), we make use of the oven. We found that 400 degrees is the sweet spot; lower heat renders the fat but doesnât crisp the bacon strips, and the strips burn before the fat is rendered if the oven is too hot. French Toast Casserole
Making French toast can be easy, but if youâre trying to make it for more than four people, someone is guaranteed to get cold, soggy French toast. We fix that by translating the concept of French toast into a casserole.
