So now that weâre officially into November, are your Thanksgiving plans, like mine, still this side of firm? Over the years, our guest list and recipe lineup were pretty consistent. Last year we had 18 around the table, this year, it will be just my wife and two daughters. Folks that usually join us will be cooking themselves. Have to halve it?
As good as these potatoes are, sometimes a full batch is too much. To serve six, halve the measurements of all the ingredients, cook the potatoes in a large saucepan, and bake them in an 8-inch square baking dish. Leftovers can be gently warmed in a low oven or on the stovetop; they’re excellent the next morning with a poached egg on top.
