Ceramic nonstick skillets offer some intriguing benefits (safer materials, environmentally friendly, etc.) over traditional nonstick skillets, but by and large we’ve found that ceramic skillets don’t live up to the hype. In our previous tests, the ceramic skillets failed miserably–cooked food clung to the pans (even the new pans!) and they deteriorated quickly. Manufacturers are constantly making updates to their products, so to keep our ratings accurate, we’ll retest equipment accordingly. In our most recent test of ceramic nonstick skillets we wanted to find out if any newer models could meet our nonstick and durability expectations. It also has a broad cooking surface, gently sloped walls, and a comfortable handle. Because it runs a little hotter than our favorite regular nonstick skillet, you may need to adjust the heat level or cooking time when following recipes. It became scratched when we cut in it. None of the skillets contained polytetrafluoroethylene (PTFE), the compound found in regular nonstick skillets that can release dangerous fumes if the pan is heated above 500 degrees. We prepared fried eggs with no oil, Beef and Broccoli Stir-Fry, Pepper and Onion Frittata with Arugula Salad, Pan-Fried Sole with Lemony Herb Butter, and Sautéed Peas with Shallot and Mint. Nonstick Ability Our dry egg tests helped identify the ceramic skillets with the most consistent nonstick abilities. Our goal was to evaluate performance as we cooked one egg after another on the same pan to see how long it would take before the food would stick. (The benchmark was 50 eggs.) We repeated the dry egg test again after our other cooking tests. Only two ceramic skillets passed our dry egg tests, so we disqualified the other five models for the remainder of our testing. Capacity The two remaining pans offered about the same surface area (9.5 and 10 inches across), but featured different side designs–one had steep sides and the other had wider sloped sides. We preferred the model with sloped sides because we were better able to move the food around the pan. Ease of Use Both pans were easy to maneuver, although they were heavier than what we typically prefer. We also evaluated how cooking times and temperatures were impacted by the ceramic construction. We discovered that the ceramic pans ran hotter and cooked food faster. Durability For our abuse tests we made four cuts in each pan to evaluate scratching of the surface, plunged the pans into freezing water immediately after heating them to 400 degrees, and banged each on cement. These knives come in straight-bladed and serrated styles. We sliced tomatoes, baguettes, and salami and halved kaiser rolls, avocados, and BLT sandwiches. Sharpness The sharpness of the blade played the biggest role in determining our favorite knife. Because sharpness is determined by the edge angle of the blade, we checked the angles of the blades to see if they conformed to the manufacturer’s reported specifications, which all of the knives did. However, when knives are sharpened incorrectly, the angles can have coarser edges. Some of the knives were dull and struggled to make clean slices through fruit, bread, and our loaded BLTs. These knives left ragged edges and required more effort while slicing. Blade Design The models varied in serrated length of the blade, tip design, and shape. Some of the models felt oversized and or undersized for certain tasks such as slicing bread or fruit. And most of the models lacked serrated tips and heels. We preferred a serrated length of about 5 inches and blades with smooth-edged, narrow tips. We also favored thick blades over thin blades because the thin blades felt flimsy while cutting. Handle Design We preferred models with handles that were about 4.5 inches long and with a circumference size of less than 2.75 inches as these offered better grip-ability.
