We all have a lot going on. Our staff Zoom meetings and small check-ins offer me a window into how our test cooks, product review team, and admin staff are juggling work, family, cooking, and free time (no surprise, that last one gets sacrificed to the first three). I bet their lives look a lot like yours. Seven months in and with the holiday season knocking (OK, maybe not knocking, but we can see it coming down the street), our mission to serve you and every home cook remains steadfast. Given that more people have become All-Access members in 2020 than any previous year means that my hardworking colleagues are doing something right.

And right now, as we all figure out what our Thanksgivings will look like, as a resource for classic, make-it-every-year recipes and twists on tradition for those who feel a bit more adventurous. Iâve got my eye on this Sweet Potato Salad with Cumin, Smoked Paprika, and Almonds from Cookâs Country as well as what might be the prettiest-ever Cookâs Illustrated dessert, Cranberry Curd Tart with Almond Crust. Iâm always looking for easy weeknight recipes at this time of year, especially dishes with bold flavors that balance all the rich holiday food. Chana Masala and Pan-Seared Shrimp with Pistachio, Cumin, and Parsley are both on my âto makeâ list.

1) CURE: Salt turkey (along with aromatics) for 4 to 6 days.
2) COOK: Oven-poach turkey in fat for 4 to 5 hours.
3) HOLD: Refrigerate for up to 6 days. (This step can be skipped.)
4) BROWN: Warm through on stovetop, then brown in hot oven.
