Models were either made of ceramic or porcelain, materials that can withstand the high heat of a broiler. We prepared cake, bread pudding, macaroni and cheese, potatoes, brisket, and salmon. To our surprise, all of the models performed decently, but a model’s handle design and capacity proved to be the most important considerations in selecting our favorite baking dish. Handles The shape of a model’s handles determined how easy or difficult it was for us to maneuver the dish, which was especially important when removing the dish from the hot oven. The models we tested featured either looped handles or tabs. Models with tab handles offered minimal support as we moved the dishes. We struggled to get a secure grip on these handles, an issue which was magnified by the oven mitts we needed to wear due to the high heat of the oven and dish. We preferred the models with looped handles (those containing an open space for one’s finger) because these dishes were much easier to grasp. Capacity The dimensions of all the models were mostly uniform to a standard 13 by 9-inch size. However, the volume (space to hold liquids and food) of the dishes and the depth of the dishes varied. The dishes with smaller capacities (12 cups to 13 cups) were harder to arrange food in and crammed the contents together due to their narrower sides. The dishes with larger capacities (19 cups) posed the opposite issue, dispersing the contents too far apart. We preferred the models with a capacity somewhere around the 14.25-cup range.
