Fresh and bursting with flavor, this Thai-inspired dish is everything a fish recipe should be. (And it wonâÂÂt take you long to prepare!) Start by cooking the rice, mushrooms, bamboo shoots, ginger, and scallions in a nonstick skillet. After the rice has simmered for about 10 minutes, lay the fillets on the rice and mushroom mixture in the pan. Drizzle the fillets with coconut curry mixture and cover until fully cooked.
Grilled Fish Tacos

Colorful, fresh, and immensely satisfying, fish tacos are remarkably versatile. YouâÂÂve probably seen them fried in a traditional batter, but for this dish we decided to nix the batter and opt for the grill. Prepare the chili mixture by heating oil in a skillet over medium heat and cooking ancho chili powder and chipotle chili powder until fragrant. Then add other aromatic spices and cook for about 30 seconds. Add tomato paste to skillet and combine with other ingredients before adding orange juice and a bit of lime juice. Once thoroughly combined (about 2 minutes) transfer mixture to bowl and add swordfish, making sure fish pieces are fully coated. Allow mixture to cool before proceeding with remaining steps.
Some fish recipes call for removing the skin, bones, or excess flesh. A boning knife is the best tool for these tasks because its narrow, thin blade allows you to make more precise cuts in the fillets.

Mediterranean Couscous Salad

Bring the flavors of the Mediterranean home to your kitchen with this fresh and simple salad. After youâÂÂve prepared the couscous (and given it time to cool) add the cherry tomatoes, parsley, scallions, and pepperoncini rings to the pot and toss until fully combined. Prosciutto-Wrapped Cod with Lemon-Caper Butter

You might enjoy a simple pan-roasted cod fillet from time to time (we certainly do!), but if youâÂÂre looking to change things up, consider this equally simple (yet undeniably impressive) alternative recipe. To ensure that the prosciutto gets nice and crispy, start by cooking the wrapped fillets on a nonstick skillet for 2-4 minutes before transferring the wrapped fillets to the oven to finish cooking. Baked Stuffed Shrimp
The secret to these tasty little bites is all in the stuffing, which we perfected with a blend of baked panko bread crumbs, fresh herbs, Dijon mustard, scallions, lemons, mayonnaise, and a blend of aromatic spices. To keep the stuffing in place on the shrimp, toss shrimp with a mixture of oil, lemon zest, and salt.

Grilled Blackened Red Snapper

Cajun-inspired spices such as paprika, onion powder, garlic powder, and cayenne pepper are what give these fillets their distinctive smoky flavor. For this recipe youâÂÂll want to give your skillet a rest and take things outside to the grill. Worried the fillets will stick? Use our classic technique: once the grill is sufficiently hot, fold paper towels into a thick wad; grab tongs and dip the wad in oil and then wipe the hot grate; repeat several times before resting fillets on the grill.
If our method for wiping the grill grate before cooking fillets does not work (and your fillets still stick) simply use a metal spatula to separate the skin from the flesh and serve the fillet skinless.
Keep fillets from falling apart by using a fish spatula. Unlike regular spatulas, these have longer and roomier heads, so youâÂÂll have greater control as you reposition or flip fillets.
