[Pizza Party. 2-28-2020](
What can we say about our love for pizza that hasnât already been said? Itâs cheesy, warm, and comforting, and weâre looking forward to digging into a slice or two this weekend. For our [Thick-Crust Sicilian-Style Pizza]( we achieve a creamy, golden interior and a delicate, crisp bottom by using a mixture of semolina and all-purpose flours. Baking our [Cast Iron Pan Pizza]( in a generously oiled cast-iron skillet âfriesâ the outside of the pizza dough for a satisfyingly crisp crust. Thick-Crust Sicilian-Style Pizza
We use a generous amount of olive oil in the dough to tenderize it then we cold ferment the dough overnight to let flavors develop without large bubbles forming in the dough. We top it with a concentrated and complex long-cooked tomato sauce and a mixture of cheesesâa combination that stands up to the thickness of the crust below.

Cast Iron Pan Pizza
Crushing canned whole tomatoes (which are less processed and fresher-tasting than canned crushed tomatoes) by hand allows juice to drain off for a thicker sauce. Pureeing the tomatoes in the food processor with classic seasonings makes a fast no-cook sauce. Pressing shredded Monterey Jack cheese around the edge of the dough and up the sides of the skillet creates a well-browned, crispy, savory ring of cheese called frico.

Pizza Dip
A combination of mozzarella and Parmesan gives this dip plenty of cheesy flavor. Cream cheese, which is very stable when melted, holds the dip together while it bakes. Adding jarred pizza sauce, dried oregano, and red pepper flakes made it taste like it came straight from a pizza shop.
