Our recipe transforms a humble sirloin roast into [an elegant holiday meal]. We cut the roast in half and tie it along its length to create two attractive cylinders that cook in just 2 hours. Salting the roasts overnight seasons them well and helps keep them moist during cooking. To ensure even cooking, we start the roasts in a low 225-degree oven. And for flavorful, crusty exteriors, we sear the roasts on all sides; coat them with an aromatic paste of garlic, anchovy, fennel, coriander, paprika, and oregano; and then briefly place them in a 500-degree oven.
