We standardized our recipes to ensure that we were precise with our timing because even an extra minute under pressure can impact the quality of the dish. [It's Easy to Eat Well When Great Tasting Recipes are this Simple]( [Weeknight Paella]( This saffron-scented dish from Valencia, Spain, is a showstopper, but unusual ingredients and complicated preparations can make it intimidating to tackle at home. (The exceptions for this rule are recipes for which we want the starch to help thicken the dish, such as our Shrimp and Asparagus Risotto.) [Creamy Spring Vegetable Linguine]( This confoundingly uncomplicated pasta dish was a revelation to us: perfectly cooked al dente noodles in a silky sauce with a vibrant mix of vegetables and flavors—but without multiple pots, boiling water, or draining. You cook the pasta directly in the sauce in the Instant Pot (use our precise measurement of water for this shortcut). The grated Pecorino Romano emulsifies into the cooking liquid to form a sauce. It’s bright and creamy, and it couldn’t be easier. [Salmon with Wild Rice and Orange Salad]( Despite its name, wild rice is actually an aquatic grass (leave it to ATK to set things straight). We love it for its high nutritional value and woodsy smokiness. The downside is that it can take nearly an hour to cook.
