We wanted to find an easier way to get that crunchy, deeply seasoned exterior and juicy meat we all love—without going to the trouble of deep frying. Our new oven-frying technique makes this comfort food favorite a weeknight option by using a very hot oven and a fraction of the amount of oil needed for traditional fried chicken. The result is juicy chicken encased in an extra-crunchy, shaggy coating. NOTES FROM THE TEST KITCHEN HOW TO MIMIC STOVETOP FRYING IN THE OVEN We pour a good amount of oil into the bottom of the skillet to cover it in a thin layer, ensuring that the chicken crisps up on each side. The oil heats quickly in the preheated skillet, preventing the flour coating from turning gummy. 1. HEAT SKILLET Place cast-iron skillet on middle rack in 450-degree oven so it gets nice and hot. 2. ADD OIL Once skillet is heated through, carefully remove it from oven and add ½ cup vegetable oil. 3. ADD CHICKEN Carefully place chicken, skin side down, in hot oil and return skillet to oven. 4.
