Mastering Weeknight Meals
Home cooks’ styles and abilities may vary, but one commonality we’ve found among home cooks is the ever-present need to master weeknight meals. How can you make a quick, balanced meal during the week thatâs also flavorful and, most importantly, exciting? This conundrum is something that [Cookâs Country]( magazine investigates in every issue. We provide eight 30-minute meals, a collection of five easy variations of a recipe, and a one-pan meal to get you started. Or serve quick-cooking [skirt steak]( with [sautéed zucchini and a zesty, herbaceous scallion sauce](.
[Apricot-Glazed Chicken with Chickpeas, Chorizo, and Spinach](
We aimed to create [balanced flavor in this 30-minute meal]( by adding lemon zest, salt, and pepper to the apricot preserves to bring a brightness to the glaze. We then sauté chickpeas and spinach with spicy chorizo for a side dish, which also balances the relative sweetness of the chicken.

[Pan-Seared Cod with Blistered Green Beans and Red Pepper Relish](
Flaky white fish such as cod, halibut, and haddock [cook relatively quickly on the stovetop](. We recommend buying fillets that are 1-inch thick and cooking them for about 6 minutes per side until the fish registers 140 degrees. Blistered green beans take only 10 minutes to cook in a nonstick skillet, and the relish simply combines jarred roasted red peppers, toasted almonds, oil, basil, vinegar, salt, and pepper.

[Pan-Seared Skirt Steak with Zucchini and Scallion Sauce](
Skirt steak [takes only 2 minutes of pan searing on each side]( to come together. We pair it with sautéed zucchini, which cooks in about 5 minutes on the stovetop. Sauces are also a game changer when it comes to weeknight meals, livening up any spread of protein and vegetables. In this recipe, we whip up a scallion sauce that consists of parsley, scallions, oil, water, vinegar, mustard, salt, and pepper.
