We were uncompromising in our lofty goal for this recipe: We wanted [ice cream reminiscent of fresh strawberries and cream]( and as good as any ice cream parlorâs version. Fresh strawberries contain a lot of water, which turns to coarse ice crystals in the freezer. To combat this, we add sugar to the strawberry puree to keep some of that water from freezing. But the real secret is adding freeze-dried strawberries to the mix; having never been heated, they taste fresh, and because theyâre dried, they absorb and trap excess water from the fresh berries.

Strawberries can also be used in savory salads to [add that just-right balance of sweetness](. Many poppy seed dressing recipes turn out too thick and over-the-top sweet, with no poppy seed flavor. To solve the problem, we toast the poppy seeds to enhance their flavor and then make a simple vinaigrette with red wine vinegar, a minimal amount of sugar, and mild vegetable oil.

This [Strawberry-Rhubarb Pie]( is among the favorite recipes ever developed in the test kitchen. Sweet strawberries and tart rhubarb are a winning flavor combination, but they can turn into a soupy mess when baked unless you take steps to manage their high water content. In our recipe, we macerate the rhubarb and some of the strawberries with sugar to draw out their excess liquid; then, we cook down the resulting syrup with the remaining strawberries to make a jam-like mixture that we fold back into the rhubarb.
