Chicken is a staple on any grilling menu. Spice up this go-to entrée with our [Peri Peri Grilled Chicken]( recipe. The first step in making this deeply flavorful, aromatic African dish is producing perfectly cooked meat and crisp skin. To do this, we add plenty of salt to the spice rub and let the chicken sit overnight, which seasons the meat throughout and helps it stay juicy and moist when cooked. We then set up the grill with a cooler side and a hotter side, as well as a pan of water, to help regulate the temperature. After rendering the skin and charring it on the hotter side, we move the chicken to the cooler side to finish cooking gently, placing the dark meat closer to the heat and the white meat farther away.

[Grilled corn is a surefire crowd-pleaser]( and this recipe uses [a divine cilantro-lime butter]( to lend a special brightness of flavor. Leaving the corn in its husk traps just enough moisture to lightly steam it and protect the kernels from toughening over the high heat of the grill. After the husks have blackened, we cut off the base of the ear and easily peel away the husk and silk. We then add the cilantro-lime butter before it is returned to the grill to lightly caramelize.

Memorial Day is a patriotic holiday, so why not bring out a dessert that exhibits some red, white, and blue? Our [Summer Berry Trifle]( fits the bill, and itâs easy to scoop and serve for a party. In this recipe, we streamline the components so that the entire trifle can be made from scratch in just a few hours. We add a little extra flour to a classic chiffon cake so we can bake it in a rimmed baking sheet, which bakes and cools faster than the traditional tall chiffon cake. We prevent our pastry cream from turning runny during assembly by adding more cornstarch. And rather than leaving all our berries whole, we mash one-third of them so their juices help the trifle components meld.
