I always think of it as the time of year when taking a nap in a hammock is about all I really feel like doing. Certainly turning on the oven to bake dessert is not on the agenda. But I donât want to skip it altogether. Luckily, we have some great recipes that take full advantage of sweet summer fruit and simple combinations that donât skimp on deliciousness but also donât need heat. One of my favorites is [Mango-Lime Sorbet]( which calls for pureeing mango in a food processor and then putting the freezer to work for an intensely fruity and creamy result that will cool you down. Itâs not all about fruit, though; sometimes I need chocolate. [No-Bake Fudgy Squares]( are a fantastic treat that just take a few short intervals in the microwave. And finally, if I make an exception for just 15 minutes in the oven to toast the crust, this [Summer Berry Pie]( is a rockstar for the way it showcases blueberries, blackberries, and strawberries.
