If youâve ever struggled through a bowl of gummy, mushy sesame noodles, listen up. Through our weeks of testing, we discovered that gently cooking the noodles at a bare simmer (170 degrees) instead of boiling meant that they absorbed less water and released less starch on the exterior, so the dish doesnât turn gluey. Rinsing cooked noodles makes them mushy; they just absorb more water. Instead, spread them on a baking sheet and transfer them to the fridge for firm and lightly chewy noodles. Coat the noodles with our savory dressing made with Chinese sesame paste, ginger, and garlic; seasoned with soy sauce; and given a kick with chili oil. Add toppings based on your preference (omelet strips, shredded chicken, deli ham sliversâitâs your choice!). Key lime pie has become a point of pride in Florida. Puckeringly tart key lime filling in a graham cracker crust topped with whipped cream are common elements. Our latest take on this classic pie adds crushed pretzels to the graham cracker crust (for buttery salty-sweet appeal); doubles the usual amount of filling ingredients (using fresh Persian lime juice from those everyday limes we all recognize!) for a tall pie; and adds a light, fluffy meringue top dusted with grated lime zest for an extra layer of bold citrus flavor. [â] Made this for dessert last night. I loved the meringue topping, it was tasty and also light, not sticky and made the pie lighter than most key lime pies.
