So now, at the apex of summer, I’m doing the least. Because of who I am, I carefully planned how I’m going to chill out. As a professional equipment tester my mind ticked through a Rolodex of equipment and cooking methods with the goal to minimize work and maximize deliciousness. Superchill, right? Here’s what I came up with. - Grilling can cut down on dishes because you’re not dirtying pots and pans. Debate all you want: [gas]( vs. [charcoal]( use both. But gas is easier, so it’s a propane summer for me. [Our winner is fantastic](. I love our new winning [Weber Deluxe Grilling Pan](. I just toss whatever I’m cooking (usually veggies or chicken thighs) onto it and everything gets nicely browned and smoky instead of scorching or falling through the grates. Also, a PSA: If you don’t have good [grill tongs]( a[grill spatula]( or a [grill brush]( it might be time to upgrade. Some of the tools I see people using? You’re better off with a stick. - There’s nothing simpler, easier, or better than a good tomato sandwich at the season’s peak. I luxuriate in having the perfect knife for tomatoes, as they’ll make up 75 percent of my diet from now through mid-September. The [serrated utility knife]( is a less common blade that’s [earned our love]( over the years. It’s essentially a shorter, nimbler bread knife, and the serrations nimbly grip and bite into tomato skin. Our [winner]( or [best buy]( utility knives are great. [Our winning bread knife]( is bigger to wield but also excellent at slicing tomatoes (and at under $20, a real value). In the spirit of saving time, I must also call attention to [this $6 tomato corer]( I tested that’s [become legendary on our team]( especially for the canners among us. - I’m keeping [my Yeti]( our winning hard cooler, full of ice with drinks in it, on my patio. It keeps ice for seven days, so I just toss in new cubes and drain/clean as needed. I swear every time I sit down a kid asks me for something—now I just point them at the cooler (the baby has yet to figure it out). Yeti coolers provide legit refrigeration, and, as someone who absolutely must have their feet up to be comfortable, they are an excellent foot rest that doesn’t slide around. [Our best buy from Coleman]( keeps ice almost as long; its handle wasn’t as durable but at a fraction of the price of the Yeti, it’s a great, less expensive hard cooler.
