Luckily, the grill can be a great sub for an oven, and there are many foods that not only taste great but also get even better on the grill. These are some of my favorites from our book [The Outdoor Cook.]( I’ve linked to a digital versions of a recipe if they use the same flavor profile and similar technique. The [grilled flatbreads]( (page 271) are a great entry-level recipe for baking any bread on the grill. The dough comes together easily in the food processor, and there are no intricate shaping steps. Feel free to tear off a piece and eat with some beautifully [grilled vegetables](. Guess what? If you can make that flatbread, then you can certainly tackle this [No-Knead Rustic Loaf]( (page 289). Beer, honey, and vinegar help to give the loaf a complex, slow-fermented flavor. Let me tell you—few things are more impressive than pulling a loaf of rustic bread off the grill. You’ll be the hit of the neighborhood with this recipe. OK, I’m leaning heavily into the “bake” part of this [New England Clambake]( (page 231), but the method of loading kielbasa, corn, potatoes, clams, and lobsters on the grill so that they are all cooked to perfection and imbued with the flavor of the flame is pretty ingenious. Plus, you don’t have to dig a pit at the beach for this “bake.” There’s also a lovely recipe for big and fluffy biscuits (page 285) in the book that scoops balls of biscuit batter into a seasoned cast-iron skillet The biscuits bake on the cooler side of a preheated grill—which means that these are perfect to cook alongside your grilled main course. The biscuits bake up tall, with a crust that is wonderfully craggy and hearty. Lest we forget dessert, let me tell you that you will definitely want to make the [skillet brownie]( (page 301). It is impossibly gooey, and when it’s served while still warm, it’s perfect with ice cream. Finally, this [rustic summer fruit tart]( (page 308) will wow your guests. The recipe uses the technique of fraisage to smear the dough in order to form light, flaky layers during baking. You can mix and match the fillings—it’s a mixture of stone fruit and fresh berries—to match what looks best at the market that week. Once again the cast-iron skillet serves as the baking pan, capturing the juices from the fruit and caramelizing the bottom of the tart.
