Make It for Her Instead From Dan Zuccarello, Executive Food Editor, Books Honestly, I’ve never been a fan of taking my mom out for brunch on Mother’s Day. If I have learned anything from past years, it’s that the positive sentiment of taking my mom out on her day is quickly overtaken by the frantic pace of an overcrowded restaurant that wants to get us in, fed, and out the door as quickly as possible. I’ve taken to making brunch for my mom and think you should too. With a few reliable recipes and a sturdy gameplan, making brunch for Mom can be really straightforward and easy, affording you more time to do what you wanted to all along: spend quality time with Mom and remind her she is special. Here are my plans for this year’s brunch to serve 4 to 6 people. My mom is a big fan of ginger scones, and the recipe for [Small Batch British-Style Currant Scones]( is a great start. I have found that I can easily swap finely chopped crystalized ginger for the currants. To save time the morning of, I’ll make the scones days in advance, freeze them, then simply bake them from frozen by adding an extra 5 minutes. [Scrambled eggs]( are underrated, in my opinion, especially when you are leveling them up with asparagus and smoked salmon. My general rule for entertaining is to have one recipe that requires my active attention, and this is it for the day. I’ll chop and measure all the ingredients ahead of time to limit the amount of time I spend in front of the stovetop. I also enjoy a bright, crisp brunch salad, and this [Spring Pea Salad]( is perfect. Because the dressing can be combined and the peas can be blanched, shocked, and refrigerated up to 24 hours before serving, I can quickly and easily assemble the salad just before sitting down. Admittedly, that’s probably enough, but in case Mom could go for something sweet, I’ll have [Strawberry–White Chocolate Mousse]( waiting in the wings.
