As far as I knew, Seattle had seafood, and plenty of it; coffee, of course; even fresh cheese, beer, piroshki, and cream cheese–laden hot dogs. But chicken teriyaki had never been a blip on my radar. So, I did what any curious, perpetually hungry food writer would do. I hopped a plane to eat this phenomenon for myself. Sure enough, on nearly every street corner, in almost every strip mall, and parked in the occasional liquor store and gas station, you can find teriyaki. I encountered a great mix of spots, [starting with the OG of teriyaki, Toshi Kasahara, at his namesake Toshi’s Teriyaki Grill](. Toshi is largely credited with bringing the teriyaki craze to Seattle, and his teriyaki is regarded by many as the gold standard. Matt Parker at [Grillbird]( would agree, and he’s got a picture of Toshi hanging on the wall of his Hawaiian-inspired teriyaki joint to prove it. At its core, Seattle teriyaki is a blending of cultures, techniques, and flavors, and perhaps no restaurant represents this as well as [Ta Joia]( where they infuse a typical teriyaki menu with tastes of Brazil and Korea. As I soon learned, teriyaki is the backbone of the Seattle dining scene. The working person’s go-to meal. Something to grab on the go that’s filling, affordable, and invariably delicious.
