Spring is a joy in the kitchen too. After a long winter, it’s a treat to enjoy fresh, light produce-centric dishes. Here are a few that I plan on cooking in the next few weeks. With shades of green and pink, it’s a real looker, too. I have a large rhubarb plant in my garden, and along with chives, it’s the first perennial to pop up in early March.
